Once the onion and celery are soft, add in a package of sliced mushrooms and cook until the mushrooms are soft. Season with salt and pepper. Next add in a 14 oz can of stock, you can use vegetable stock to keep it vegetarian or use chicken or beef stock as well. Bring the mixture to a boil and add 2 cups of Minute Rice Brown Rice. Cover and cook on medium to low for about 5 minutes or until the broth is soaked up and the rice is tender. I also added in about 2 tsp. or so of Garlic/herb seasoning and a little more salt and pepper to taste!
When you get to this last stage of cooking the rice, you can then cook your fajita meat. most fajita meat is fairly thin so it doesn't take quite as long to cook.

2 stalks celery, chopped

Make different variations of the pilaf using whatever veggies you have on hand or even throw in some fresh herbs, cheese or nuts at the very end to make it super hearty! This was a quick and easy meal and has all your bases covered with protein, veggies and just a little carbs! It is great to make if you are short on time and even if you don't plan very well like me :)
